Nutritious Recipes to Try This Winter

Lemon Coriander Soup

Lemon being citrus fruit contains plenty of vitamin C which will keep you away from cold and cough during winters.

Ingredients:

  • 50 gm Cabbage
  • 40 gm Lemon
  • 25gm Mushroom
  • 25 gm Carrots
  • 20 gm Spinach
  • 15 gm Fresh Coriander
  • 5 gm White Pepper
  • 800 ml Water
  • Salt to taste

Method:

  1. Cut all the vegetables in triangular shape then blanch them together.
  2. Prepare coriander stock.
  3. Remove the leftover coriander and add the blanched vegetables to it.
  4. Add white pepper, lemon juice and salt. Serve hot!

Carrot Beetroot Soup:

Carrots are readily available almost everywhere during this time of the year. A combination of both carrots and beetroots makes the recipe, even more, healthier. Good for glowing skin, sharp vision and a smooth functioning immune system.

Ingredients:

  • 300 gm Beetroot
  • 300 gm Carrot
  • 20 gm Ginger
  • 20 gm Fresh Coriander
  • 5 gm Green Chilly
  • 5 gm Bay Leaf
  • 8 Cumin Seeds
  • 750 ml Water
  • 20 ml Oil
  • Salt to taste

Method:

  1. Heat oil in a pan. Add bay leaf, ginger, cumin seeds and saute for a minute.
  2. Add roughly chopped carrots, beetroot, green chillies and cook for about five minutes.
  3. Add water and when it comes to a boil, strain the mixture and prepare a puree out of it.
  4. Season it with salt and spices of your choice.

Chicken and Corn soup:

We all know that chicken has a lot of proteins in it which is good for the body in many ways. Corn adds to the nutritional value all together as it is filled with potassium and dietary fibers.

Ingredients:

  • 1 liter Chicken stock
  • 150 gm Corn
  • 30 gm Chicken Breast
  • 30 gm Oil
  • 25 gm Garlic
  • 25 gm Fresh Coriander
  • 15 gm Cumin Seeds
  • 5 gm Turmeric
  • Salt to taste

Method:

  1. Heat oil. Add cumin seeds and finely chopped garlic. Saute till it crackles.
  2. Add corn paste and cook for a while.
  3. Add chicken stock along with seasoning.
  4. Garnish with coriander and diced chicken.
